Chicken Breasts With Tomato Butter - cooking recipe

Ingredients
    4 Tbsp. butter, room temperature
    1/4 tsp. garlic
    1 Tbsp. tomato paste
    1 tsp. parsley
    1/4 c. flour
    salt and pepper
    4 chicken breasts
    2 Tbsp. oil
Preparation
    Combine 3 tablespoons of butter with the garlic, tomato paste and parsley.
    Scrape onto a piece of plastic wrap and use the wrap to help form a cylinder.
    Wrap tightly and chill.
    Combine flour, 1/2 teaspoon salt and 1/4 teaspoon pepper.
    Dredge chicken in the flour mixture.
    In a large frying pan, melt remaining 1 tablespoon butter in the oil over medium high heat.
    Add chicken and reduce heat to medium.
    Cook turning once until chicken is just done, about 15 minutes.
    Top hot chicken with slices of tomato butter.
