Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. oil
    1 Tbsp. vanilla
    2 c. grated or shredded zucchini, unpeeled
    3 c. flour
    1 tsp. salt
    1 tsp. soda
    1/2 tsp. baking powder
    1 Tbsp. cinnamon
    1 c. raisins or nuts (optional)
Preparation
    Beat eggs until light.
    Slowly add sugar; beat.
    Add oil and vanilla.
    Add zucchini.
    Sift dry ingredients; mix to previous ingredients.
    Bake in 2 greased pans at 325\u00b0 for 1 hour.
    Check by putting knife through middle; if it comes out clean, it's done.
