Ingredients
    1 medium onion, chopped
    1/4 c. chopped bell pepper
    1 Tbsp. olive oil
    2 lb. lean ground beef
    2 eggs, beaten
    1 1/2 tsp. salt
    1/4 c. chopped parsley
    pepper to taste
    1 jar no-sugar-added spaghetti sauce
Preparation
    Saute onion and bell pepper in the olive oil until tender. Put into a large bowl with the meat, eggs, salt, parsley and pepper. Blend very well with your clean hands. Roll the mixture into a loaf shape and put into a loaf pan. You should have a little room around all sides of the meat. Pour the spaghetti sauce over the meat loaf and bake at 350\u00b0 for 1 1/2 hours.
