Cajun Beans And Rice - cooking recipe
Ingredients

1 lb. red kidney beans, sorted and washed
3/4 c. chopped green pepper
2 tsp. salt
1/4 tsp. black pepper
1 1/2 tsp. dried parsley
4 c. cooked rice
2 qt. cold water
1 c. onion, chopped
1 c. minced celery
1 c. smoked ham
1/2 tsp. cayenne
3 Tbsp. sliced green onions
Preparation

Soak beans in water in a heavy kettle.
Add onion, green pepper, celery, ham, salt, red and black pepper.
Bring to a boil and then simmer gently 2 1/2 hours.
Stir in green onions and parsley.
Cook very slowly, about 30 minutes.
Serve over beds of hot fluffy rice.
