Rice And Peas Or Beans - cooking recipe

Ingredients
    salt pork or bacon or ham
    1 lb. pkg. red beans
    1 1/2 lb. rice
    1 medium onion
    1 to 2 cloves garlic, minced
    2 to 3 pieces fresh thyme
    1 Tbsp. brown sugar or honey
    1 tsp. vegetable oil (optional)
    1/2 bell pepper, diced
    1 stalk celery, diced
    1 medium hot pepper, diced
    salt to taste
    4 to 6 c. cold water
Preparation
    Wash and pick over beans.
    In a large pot combine meat, beans, cold water, onion, garlic, thyme, sugar, sweet pepper, hot pepper and
    celery.
    Cover pot.
    Bring to a boil and cook until beans are
    soft.\tAdd
    salt, oil and rice. Add water if necessary.
    Cook on low heat until rice is cooked and water is absorbed.
