Lemon-Zucchini Bread(Diabetic) - cooking recipe

Ingredients
    1/3 c. unsweetened applesauce
    2/3 c. apple juice concentrate
    1/3 c. fructose
    1/3 c. oil (I use corn oil)
    2 eggs
    1 Tbsp. lemon juice
    1 tsp. lemon peel
    2 c. flour
    1/2 tsp. cinnamon
    2 Tbsp. baking powder
    1/2 tsp. salt
    1/2 tsp. baking soda
    1/2 tsp. nutmeg
    1 c. grated zucchini
    1/2 c. chopped pecans
    cooking spray
Preparation
    Preheat oven to 350\u00b0.
    With mixer, combine applesauce, apple juice concentrate, fructose, oil, eggs and lemon juice.
    Beat until well blended.
