Zucchini Relish - cooking recipe
Ingredients

10 c. ground zucchini (seed, but do not peel)
4 c. ground onions
2 green peppers or 1 red and 1 green
5 Tbsp. salt
5 c. sugar
2 1/2 c. vinegar
1 tsp. turmeric
1 tsp. nutmeg
1 tsp. dry mustard
1 tsp. cornstarch
2 tsp. celery seed
Preparation
-
Bring to a full rolling boil.
Fill jars and seal.
Recipe x 4 = 15 quarts.
That is about 10 pounds of onions and 10 pounds of sugar.
