Tater Candy - cooking recipe

Ingredients
    1 large potato (peeled and boiled)
    box confectioners sugar
    dash salt
    peanut butter
Preparation
    Peel and boil potato until done. Mash with fork. Add a pinch of salt and pour in powdered sugar. Mix well. This makes a stiff dough. On a well floured surface, roll out to 1/4 inch thickness. Spread peanut butter over the top of this and roll up like a jelly roll. Chill in refrigerator before serving.
