Ingredients

2 1/2 qt. milk
1 c. long grain rice, washed
3/4 c. sugar
3 eggs, beaten
vanilla to taste
3/4 c. sugar
1 c. milk
Preparation

Put rice, milk and 3/4 cup sugar in a large pot.
Cook over medium-high heat, stirring occasionally.
When mixture has boiled, lower heat and continue to cook (uncovered), stirring constantly for about an hour or until rice is soft.
Beat the eggs in bowl. Add 1 cup milk, 3/4 cup sugar and vanilla to taste.
Beat.
Ladle small amount of rice mixture into egg mixture.
Stir.
Pour this back into pot; raise temperature to high and continue stirring until boiled.
Turn off heat.
Pour into glass casserole dish or 13 x 9 x 2-inch pan.
Cool at room temperature, then refrigerate.
