Tortellini Soup - cooking recipe
Ingredients

1 lb. Italian sausage
1 c. chopped onion
2 cloves garlic, sliced
5 c. beef broth
1/2 c. water
1/2 c. dry red wine or water
2 c. chopped peeled tomatoes
1 c. thinly sliced carrots
1/2 tsp. basil
1/2 tsp. oregano
1 (8 oz.) can tomato sauce
1 1/2 c. sliced zucchini
1 (8 oz.) pkg. frozen meat or cheese filled tortellini
3 Tbsp. chopped parsley
1 medium green pepper, chopped
grated Parmesan cheese
Preparation

Remove
casing
and
brown
sausage.
Remove
sausage; drain and
reserve
1
tablespoon drippings.
Saute onion and garlic
in drippings.
Add beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce and sausage.
Bring all to a
boil, then reduce heat and simmer 30 minutes uncovered. Skim fat
from soup and stir in zucchini, tortellini, parsley and pepper.
Simmer covered
35
to
40 minutes.
Sprinkle on Parmesan cheese when serving.
