Salmon Croquettes - cooking recipe

Ingredients
    2 (8 oz.) cans salmon
    1 c. mashed potatoes
    2 eggs
    1/2 c. diced bell pepper
    1/2 c. onions (either yellow or green will do)
    1 c. corn meal
    1/2 c. oil
Preparation
    Drain salmon; remove bone and skin. Flake in a large mixing bowl. Add mashed potatoes and eggs. Mix well. Add bell peppers and onions. Form into palm-sized balls. Roll each ball in the corn meal. Cook in hot oil over medium high heat until browned.
