Cheesy-Potato-Soup - cooking recipe

Ingredients
    4 Tbsp. butter or margarine
    4 large potatoes, chopped
    2 to 3 large carrots, chopped
    1 tsp. dill
    1 1/2 c. milk
    salt and pepper to taste
    1 small onion, chopped
    1 garlic clove, minced
    3 c. vegetable or chicken stock
    4 oz. cream cheese
    1 to 2 c. Cheddar cheese, grated
Preparation
    Saute onion and garlic in butter.
    Add potatoes and carrots. Cook 10 minutes.
    Add stock and dill; simmer until vegetables are tender.
    Puree the vegetable mixture adding cream cheese.
    (A hand blender will allow you to blend in the same pan you are cooking in.)
    Stir in milk and Cheddar cheese.
    Serve with bread and salad for a delicious meal.
