Ingredients

2 c. sifted flour
1 Tbsp. baking powder
1/2 tsp. salt
1 Tbsp. sugar
2 eggs, separated
1 1/2 c. milk
1/4 c. shortening, melted, or salad oil
Preparation

Mix and sift dry ingredients together.
Place egg yolks and whites in separate bowls.
Beat egg whites until they form peaks. Beat egg yolks until lemon colored.
Stir in milk.
Combine milk and egg mixture with dry ingredients and beat until smooth.
Add shortening and fold in egg whites.
Ladle or pour batter onto hot waffle iron and bake until brown.
Makes 6 large waffles or more.
