Chicken Salad - cooking recipe
Ingredients

5 c. chopped, cooked chicken
1/2 c. chopped celery
2 c. drained pineapple tidbits
1/2 c. chopped pimento
1/2 c. chopped pecans or walnuts
2 Tbsp. lemon juice
1 c. mayonnaise
Preparation

Combine chicken, celery, pineapple and nuts.
In a small bowl, combine lemon juice and mayonnaise.
Add to chicken mixture and mix lightly, adding more mayonnaise if necessary.
Cover and chill well before serving.
Serve on lettuce leaves, if desired.
Makes 6 servings.
