Feta-Tomato Crostini - cooking recipe

Ingredients
    3 (6-inch) French bread rolls, split
    olive oil
    1 (7 oz.) pkg. Feta cheese, crumbled
    coarse ground garlic powder (with parsley)
    3 small tomatoes, chopped
    1 1/2 Tbsp. balsamic vinegar
    2 Tbsp. chopped fresh mint (I prefer thyme)
Preparation
    Brush cut side of each roll with olive oil.
    Place on baking sheet.
    Broil 6 inches from heat (with electric oven door partially opened) 2 minutes or until lightly browned.
    Place cheese evenly on each roll.
    Sprinkle lightly with garlic powder. Place tomatoes over cheese.
    Drizzle with balsamic vinegar and sprinkle with mint.
    Serve immediately.
    Serves 6.
