Low-Fat Corn Muffins - cooking recipe

1/2 c. honey
2 whole eggs
3 egg whites
1 3/4 c. skim milk
1/4 c. vegetable oil
1/3 c. sugar
2 Tbsp. baking powder
3 1/2 c. all-purpose flour
1 c. yellow cornmeal
1/4 tsp. salt
Preparation

In a large bowl, whisk together the honey, eggs, egg whites, milk and oil.
Add the dry ingredients and mix with an electric mixer at medium-high speed for 2 minutes.
Spray 2 muffin tins with cooking spray or line with baking cups.
Fill each cup 3/4 full. Bake at 400\u00b0 for about 15 minutes or until tops are golden brown.
Makes 24, 155 calories and 3 grams fat.
