Au Gratin Potatoes - cooking recipe

Ingredients
    3 lb. potatoes, peeled and cut up
    2 Tbsp. margarine
    2 Tbsp. flour
    2 1/2 c. milk
    1 (8 oz.) box Velveeta cheese, cubed
    1 (2 oz.) jar diced pimento
    4 Tbsp. chopped green onion tops
Preparation
    Place potatoes in a 3-quart saucepan; cover with water. Bring to a boil
    and
    cook
    20
    minutes.
    Drain
    well.
    While potatoes are draining,
    make cheese sauce.
    In a medium saucepan, melt margarine;
    slowly
    stir
    in
    flour.
    Gradually
    add milk, stirring constantly.
    Drop
    cheese cubes in and continue to cook and
    stir
    until
    cheese is completely melted.
    Remove from heat and add
    pimento
    and
    green onion tops.
    In a large casserole, add potatoes.
    Stir in cheese sauce and serve while hot.
    Adjust milk for a thicker or thinner sauce.
