Hummus - cooking recipe
Ingredients

1 lb. chickpeas (garbanzos)
1/2 c. tahini (sesame paste)
2 cloves garlic
1/2 c. lemon or lime juice
cooking broth (from chickpeas)
pita breads
paprika or cayenne to taste
olive oil
parsley
Preparation

Cook chickpeas in lightly salted water. Drain. Reserve liquid. Cool.
Peel chickpeas (this can be done by rolling peas between palms of hands to loosen skins).
Process in small amounts in food processor.
Process garlic.
Add tahini; mix well.
Add lemon or lime juice and as much cooking broth to make a medium thick dipping paste.
Place in dish with well in center. Top with olive oil, paprika or pepper and parsley. Serve with pita bread for dipping.
