Baked Country Ham - cooking recipe

1 Smithfield or any well-cured country ham
Preparation

Soak ham overnight in cold water to cover; scrub well with brush.
Place in roasting pan.
Add 5 cups water to pan; cover tightly with lid or heavy foil.
Place in cold oven.
Turn oven on, set at 500\u00b0.
After temperature is reached (watch oven signal), bake ham for 10 minutes.
Turn off heat.
Do not open oven.
Let stand 3 hours.
Heat oven to 500\u00b0 again; bake 10 minutes.
Turn off heat; leave overnight (or about 10 to 12 hours) without opening oven door.
Next day, remove ham from roasting pan, remove skin and trim fat to desired thickness.
Score fat and place on rack in baking pan.
Glaze.
