Parmesan Baked Potatoes - cooking recipe
Ingredients

6 baking potatoes
1 green onion, thinly sliced
2 eggs, slightly beaten
1/3 c. Parmesan cheese
1/4 c. margarine or butter, melted
salt and pepper to taste
hot milk (approximately 1/4 c.)

Preparation

Scrub potatoes.
Lightly grease skins.
Bake in a 400\u00b0 oven for 1 hour or until done.
Cut thin slices off top of potatoes. Scoop out inside and mash.
Add onion, eggs, 1/3 cup Parmesan cheese, margarine, salt, pepper and enough hot milk to desired consistency. Beat until fluffy.
Carefully pile mixture into potato shells.
Brush tops with additional margarine.
Sprinkle with Parmesan cheese and paprika. Bake in a 350\u00b0 oven for 20 to 30 minutes.
