River Road Cushaw - cooking recipe

Ingredients
    1 medium cushaw or large winter squash
    2 eggs
    1 c. sugar
    2 Tbsp. flour
    1 tsp. vanilla
    1/3 c. butter
    1/2 tsp. baking powder
    cinnamon to taste
Preparation
    Cut, cook and scrape squash.
    Mash squash in a large bowl. Mix in remaining ingredients and pour into a 9 x 13-inch pan. Bake, uncovered, for 45 minutes at 350\u00b0 (until brown on top). Freezes well.
