Ingredients

1 (9-inch) pastry shell (unbaked)
3 eggs
1 c. sugar
1/2 c. melted butter
2 Tbsp. lemon juice
1 tsp. vanilla
1 1/3 c. flaked coconut
Preparation

Beat eggs.
Add sugar, butter, lemon juice and vanilla; mix well.
Stir in coconut.
Pour into pastry shell.
Bake in a 350\u00b0 preheated oven for 40 minutes, or until knife inserted in center comes out clean.
Cool before serving.
Serves 6 to 8.
