Carrot Oat Muffins - cooking recipe

Ingredients
    3/4 c. quick oatmeal (uncooked)
    1 c. low-fat buttermilk
    1 1/4 c. unbleached flour
    3 tsp. baking powder
    1/2 tsp. salt
    1 egg
    3 Tbsp. honey
    1/2 c. finely shredded carrots
    1 tsp. orange rind, grated
Preparation
    Combine oats and milk; let stand 15 minutes. Beat egg and honey. Combine flour, baking powder and salt. Stir with egg mixture into oat mixture. Fold in carrots and orange rind, stirring only to moisten. Spoon into 12 muffin cups sprayed with nonfat cooking spray. Bake at 400\u00b0 for 20 to 25 minutes. Serves 12.
