Paul'S Red Beans - cooking recipe

Ingredients
    3 (15 oz.) cans dark red kidney beans
    1 onion, chopped fine
    1 lb. smoked sausage, sliced
    1/4 tsp. thyme
    2 bay leaves
    1/2 tsp. black pepper
    1/4 tsp. cayenne pepper
    1/4 tsp. Cajun seasoning
    3 cloves garlic, pressed
    1 1/2 cans water
    salt to taste
Preparation
    Brown sausage in black iron pot. Remove sausage. Saute onion in sausage drippings. Add garlic and saute 3 minutes.
    Add red beans, all seasonings and water. Simmer for 2 hours, stirring occasionally. Serve over cooked rice.
