Baked Beans, Boston Style - cooking recipe

Ingredients
    2 lb. beans (pea or navy)
    1 Tbsp. salt
    2 to 4 Tbsp. brown sugar
    1/4 c. molasses
    1 tsp. dry mustard
    1/2 to 3/4 lb. salt pork
Preparation
    Soak and simmer beans.
    Turn into a bean pot or heavy casserole without draining.
    Combine salt, brown sugar, molasses and mustard with 1 cup boiling water and pour over beans.
    Scrape rind of salt pork and cut gashes into fat 1/2-inch apart.
    Press into the beans leaving only rind exposed.
    Cover pot and bake in slow oven (250\u00b0 to 275\u00b0) for 6 to 8 hours, adding more water as needed to keep beans moist.
    Remove cover for last half hour of baking.
    Makes about 12 servings.
