Ingredients

2 c. cake flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. freshly squeezed red grapefruit juice
1/3 c. cooking oil
4 eggs
1/8 tsp. cream of tartar
1 c. sugar
Preparation

Sift
dry ingredients into bowl (except sugar).
Strain and combine grapefruit juice with oil.
Separate eggs and beat whites to stiff peaks.
Beat egg yolks and sugar until thick. Beat in about
1/2
cup flour mix with 1/4 juice mix.
Repeat until
all is used.
Gently fold in beaten whites.
Pour into two
9-inch floured
cake pans.
Bake at 350\u00b0 for 25 minutes. Frost with Cream Cheese Icing.
