Hot Beans - cooking recipe
Ingredients

1 lb. red beans
2 tsp. paprika
1 tsp. cayenne pepper
2 tsp. black pepper
2 bay leaves
1 tsp. ground cumin
1 qt. water
1 large smoked ham hock
2 or 3 tsp. salt
1 1/2 c. chopped celery
1 1/2 c. chopped onion
2 cloves garlic, minced
1/2 tsp. hot sauce
3 Tbsp. fresh parsley
cooked rice
Preparation

Mix all ingredients in large pan and cook until thickened (except rice and salt).
Serve over a bed of rice.
This is a very good dish.
I do not put salt in my beans until they are soft. Seems like salt toughens the skin.
