Vegetarian Chili - cooking recipe

Ingredients
    6 Tbsp. olive oil
    1 1/2 c. zucchini, cubed
    1 c. chopped onion
    2 cloves garlic, crushed
    1 green pepper, cubed
    2 c. crushed tomatoes
    1 Tbsp. chili powder
    1 1/2 tsp. cumin
    1 1/2 tsp. oregano
    1/4 c. chopped parsley
    salt and pepper to taste
    2 cans kidney beans, drained
    low-fat sour cream and Cheddar cheese (garnish)
Preparation
    Heat oil in large skillet.
    Add onions, green pepper and garlic.
    Saute 10 minutes until soft.
    Transfer to saucepan.
    Add tomatoes and rest of seasoning.
    Cook about 10 minutes.
    Garnish, if desired.
