Marinated Veggies And Rice - cooking recipe

Ingredients
    1 Tbsp. apple cider vinegar
    2 Tbsp. olive oil
    2 Tbsp. snipped parsley
    1 tsp. sugar
    1/2 tsp. salt
    1 c. diced tomatoes
    1 c. diced cucumbers
    1/2 c. sliced ripe olives
    1/2 c. diced onion
    2 c. cooked rice, cooled to room temperature
Preparation
    For marinade, combine first 5 ingredients in a mixing bowl. Add veggies to marinade and toss to coat.
    Cover and chill; add rice and toss lightly to combine.
