Baked Pork Roast - cooking recipe

Ingredients
    8 to 10 lb. center cut pork loin roast
    4 large garlic cloves
    salt to taste
    ground cayenne pepper to taste
    1 tsp. finely crushed, dried mint
    1 c. water or stock
    1 c. dry white wine
    1/2 c. finely chopped green onion tops
Preparation
    Preheat oven to 350\u00b0.
    Using sharp knife, make 4 deep holes in pork and stuff with the garlic.
    Season the roast with salt and pepper.
    Sprinkle with dried mint, pressing it into the meat. Place roast in a roasting pan with a rack.
    Mix water and wine together and pour around roast.
    Cover and bake until almost done, about 2 hours, basting occasionally.
    Sprinkle green onions over the top and cook, uncovered, until brown.
