Ingredients

1 Tbsp. plus 1 tsp. reduced calorie margarine
1 medium onion, chopped
1 Tbsp. plus 1 tsp. flour
1 chicken bouillon cube in 3/4 c. water
1 Tbsp. prepared mustard
1/4 tsp. pepper
16 oz. cooked potatoes, 1/2-inch cubes
1 Tbsp. dry bread crumbs
1 Tbsp. grated Parmesan cheese
Preparation

Preheat oven to 400\u00b0.
Melt oleo in small pan; add onion. Cook over medium heat until onion is translucent.
Whisk in flour and bouillon in water.
Add mustard and pepper; cook, stirring until thick.
Spray shallow baking dish with Pam.
Spread potatoes in dish.
Pour sauce evenly over top.
Sprinkle evenly with bread crumbs and cheese.
Bake until lightly browned, about 20 minutes. Yield: 4 servings.
