Coconut Pound Cake - cooking recipe

Ingredients
    1 c. shortening (all vegetable)
    2 c. sugar
    5 eggs, beaten 10 minutes (important)
    2 c. flour
    1 1/2 tsp. baking powder
    1 tsp. salt
    1 tsp. coconut extract
    1 c. buttermilk
    1 (7 oz.) can coconut
Preparation
    Cream sugar and shortening; add beaten eggs and coconut extract. Add dry ingredients and buttermilk alternately. Add coconut last. Bake in greased and floured pan at 350\u00b0 for an hour.
