Potato Salad - cooking recipe
Ingredients

8 medium size potatoes
6 eggs
3/4 c. celery, chopped
1/2 c. onion, chopped
1/2 c. cucumber, chopped
1 c. mayonnaise
2 Tbsp. fresh parsley, minced
2 Tbsp. mustard (yellow)
2 Tbsp. dill pickle juice
3 Tbsp. India relish, drained
salt and pepper to taste
Preparation

Boil potatoes in jackets until just tender.
Cool.
Boil eggs until hard-boiled; peel and cut in half.
Remove yolk to blender jar.
Peel and cut potatoes into 1/3-inch dice and put into large bowl.
Add celery, onion, cucumber, parsley, salt, pepper, relish and chopped egg whites.
Add mayonnaise, mustard and juice to the yolks and blend until smooth.
Add to potato mixture; blend well, cover and chill.
