Zucchini-Oatmeal Muffins - cooking recipe

Ingredients
    1 1/2 c. all-purpose flour
    1 c. oatmeal
    1 1/2 c. sugar
    1 c. pecans, chopped
    1 Tbsp. double-acting baking powder
    1 tsp. salt
    1 tsp. ground cinnamon
    5 eggs
    1 medium zucchini (10 oz.), finely shredded (about 2 c.)
    3/4 c. salad oil
Preparation
    Preheat oven to 350\u00b0.
    In a large bowl, measure first 7 ingredients.
    In a medium bowl, beat the eggs slightly and stir in zucchini and oil.
    Stir this into the larger bowl with the first 7 ingredients, until flour is moistened.
    The batter will be lumpy.
