Vegetable Lasagna - cooking recipe

Ingredients
    6 lasagna noodles
    1 c. chopped onion
    1 c. sliced mushrooms
    3 cloves garlic
    2 Tbsp. water
    1 c. Ricotta or cottage cheese
    1/2 c. shredded carrots
    1 (9 oz.) pkg. spinach, thawed and squeezed dry
    1 3/4 c. tomato sauce
    1 c. Mozzarella cheese
    2 Tbsp. Parmesan cheese
Preparation
    Cook noodles according to package directions.
    Saute onion, mushrooms and garlic for 1 minute. Add water.
    Cover and cook 3 to 4 minutes. Combine cheese, carrots, spinach, eggs and Parmesan cheese. Layer noodles, 1/2 sauce, 1/2 sauteed vegetables and 1/2 cheese mixture. Repeat and top with Mozzarella. Bake at 350\u00b0 for 30 to 35 minutes. Cool 10 minutes before cutting.
