Jack'S Favorite Smothered Quail Or Dove - cooking recipe

Ingredients
    quail or dove
    salt
    pepper
    flour
    butter
    Crisco
    1 Tbsp. Worcestershire
    2 Tbsp. lemon juice
Preparation
    Wash quail or dove in cold water and pat dry with paper towel. Salt, pepper and dust with flour.
    Brown in mixture of half butter and half Crisco.
    Place birds in roaster and cover with water to which a tablespoon of Worcestershire and 2 tablespoons of lemon juice have been added.
    Cover roaster and cook in 250\u00b0 oven until tender, but not falling apart, approximately 2 1/2 hours. If thicker gravy is desired, remove birds when done and add additional flour and cook slowly.
