Graham Cracker Cherry Dessert(For Diabetics) - cooking recipe
Ingredients

15 graham crackers
5 oz. crushed pineapple in its own juice
2 tsp. cornstarch
1/2 c. chopped walnuts
2 pkg. sugar-free cherry gelatin (4 serving size)
Preparation

Crush graham crackers in fine crumbs.
Line bottom of an 8-inch square baking pan with half of the crumbs.
Refrigerate. In saucepan, combine crushed pineapple in its own juice and the cornstarch.
Stir to blend.
Cook over low heat until mixture thickens.
Cool completely.
Fold in walnuts.
Now spread mixture over the top of the crumbs in the pan.
Sprinkle with remaining crumbs.
Lightly pat down the surface.
Refrigerate.
Make gelatin as directed on package.
Allow gelatin to set to the consistency of egg whites.
Pour over the top layer of crumbs.
Refrigerate until firm.
Serves 8 people.
