Orange Barley - cooking recipe

Ingredients
    7 1/2 c. barley
    5 chopped onions
    2 1/2 tsp. oregano
    3 bay leaves
    20 Tbsp. margarine
    3 cloves garlic, minced
    2 1/2 tsp. basil
    2 1/2 lb. thinly sliced mushrooms
    11 c. orange juice
    2 1/2 tsp. salt
Preparation
    Brown barley lightly in margarine.
    Add onions and garlic. Stir over moderate heat for 5 minutes.
    Add spices and mushrooms. Stir to mix.
    Add stock, juice and salt.
    Bring to a boil.
    Cover tightly and bake in a preheated 350\u00b0 oven for 1 1/2 hours or until liquid is absorbed and barely tender.
    Add liquid if necessary. Barley should be firm and chewy.
    Serves 30.
