"Eggplant Parmesan" - cooking recipe

Ingredients
    4 tsp. olive oil
    salt and pepper
    pinch of garlic
    spaghetti sauce
    small c. Parmesan cheese
Preparation
    Slice eggplant 1 inch thick.
    Soak in cold water for 1 hour. Pat dry with paper towel to absorb water, sprinkle with salt and pepper.
    Place in skillet with four teaspoons olive oil and garlic.
    Turn eggplant over once on each side, cook approximately 4 minutes on each side.
    Cover with spaghetti sauce and place cover on skillet for one hour.
    Sprinkle with fresh grated Parmesan cheese.
