Diabetic Lemon Pie - cooking recipe

Ingredients
    1 small box sugar-free pudding mix (not instant)
    1 small box sugar-free lemon gelatin
    6 pkg. Equal
    2 c. water
    1 1/2 tsp. grated lemon rind (optional)
    2 Tbsp. lemon juice
    3 1/2 c. Cool Whip
    1 graham cracker pie crust
Preparation
    Combine
    pudding
    mix, gelatin and water in a saucepan. Cook over
    medium
    heat
    until
    mixture comes to a full boil, stirring constantly.
    Add
    Equal,
    rind and juice; stir well. Pour
    into a bowl and cover.
    Chill in refrigerator until cold and slightly thickened.
