Chicken Pea Salad - cooking recipe
Ingredients

1 c. chickpeas, minced and drained
1 c. cucumber, cubed
2 c. tomatoes, cubed
1 c. sweet yellow onion, cubed
2 Tbsp. red wine vinegar
1 Tbsp. olive oil (virgin)
2 Tbsp. basil
1 Tbsp. parsley
salt and pepper to taste
Preparation

In a large bowl, combine beans, cucumber, tomatoes, onion, basil and parsley.
Add vinegar and olive oil and salt and pepper to taste.
Toss to blend.
Let stand 1 hour.
