Zucchini Fritters - cooking recipe
Ingredients

1 lb. zucchini (about 3 medium, unpeeled), grated
1 Tbsp. minced fresh parsley
1 tsp. minced fresh chives
1 c. buttermilk pancake mix
1 egg, beaten
1/4 tsp. salt
1/4 tsp. pepper
1/2 c. vegetable oil
Preparation

Combine first 7 ingredients, stirring well. Drop mixture by tablespoonfuls into hot oil (375\u00b0). Cook until golden brown, turning once. Drain on paper towels; serve immediately. Yields 1 dozen fritters.
