Ingredients

1/3 c. vinegar
1/4 c. sugar
1/4 c. water
1/2 tsp. ground cinnamon
1/4 tsp. salt
1/4 tsp. ground cloves
2 c. sliced, cooked beets
Preparation

In a medium saucepan, combine vinegar, sugar, water, cinnamon, salt and cloves.
Bring to a boil, stirring occasionally.
Add the beets.
Return to boiling; reduce heat.
Cover and simmer 5 minutes.
Cool, then chill in liquid 8 hours or overnight.
Drain before serving.
Makes 2 cups.
