Holiday Apricot-Nut Stuffing - cooking recipe

Ingredients
    1/2 lb. dried apricots, chopped
    4 c. small dried bread cubes
    1 c. coarsely chopped nuts
    2 Tbsp. chopped parsley
    1 tsp. salt
    1/2 c. hot water
    1/4 c. melted butter
    grated rind of 1 orange
Preparation
    Combine apricots, bread cubes, nuts, parsley, salt and orange rind in large bowl.
    Sprinkle butter and water over mixture.
    Toss with fork until blended.
    Pack lightly into prepared pocket of chicken.
    Makes about 5 cups.
