Spinach Quiche - cooking recipe
Ingredients

1/2 c. butter, melted
10 eggs
1/2 c. unsifted flour
1 tsp. baking powder
1 tsp. salt
1 (10 oz.) pkg. frozen chopped spinach, thawed
1 (8 oz.) can green chilies, seeded and chopped
1 pt. fine curd cottage cheese
1/2 lb. Cheddar cheese, shredded
Preparation

Preheat oven to 400\u00b0.
Place butter in a 13 x 9 x 2-inch pan in warm oven just to melt, about 3 minutes.
Beat eggs in a large bowl; mix in flour, baking powder and salt.
Squeeze thawed spinach very dry and add to egg mixture along with melted butter, chilies and cheeses.
Pour mixture into pan and bake 15 minutes. Reduce heat to 350\u00b0 and bake an additional 35 to 40 minutes.
Let stand 5 minutes to set.
Do not overbake or it will be dry.
