Curried Rice-Bean Salad - cooking recipe
Ingredients

3 c. brown rice, cooked
1 1/2 c. red kidney beans, cooked
4 green onions, chopped
1/2 green pepper, diced
2 stalks celery, diced
1/4 c. fresh parsley, chopped
1/4 c. mayonnaise
1/4 c. plain low-fat yogurt
2 tsp. curry powder
dash of freshly ground pepper
Preparation

Combine first six ingredients.
Toss to mix.
In separate bowl, combine mayonnaise, yogurt, curry powder and black pepper. Blend thoroughly with rice/bean mixture.
