Zucchini Pepper Pie - cooking recipe
Ingredients

3 medium zucchini, sliced thinly
2 green onions, chopped
1 medium bell pepper, sliced thinly
1 tomato, peeled and chopped
3 Tbsp. oil
3/4 tsp. salt
3/4 tsp. pepper
3/4 tsp. basil
3 eggs, beaten
1/2 c. whipping cream
1/2 c. grated Parmesan cheese
1 (9 inch) pie shell
Preparation

Saute zucchini, onions, bell pepper, tomato and spices until liquid has evaporated; about 30 minutes.
Pour sauteed ingredients into pie shell.
Mix eggs and cream and pour over vegetables. Cover with Parmesan cheese.
Bake 30 minutes in a 350\u00b0 oven. Serves 6.
