Green Tomato Relish - cooking recipe

Ingredients
    4 qt. or 7 lb. tomatoes
    1/2 c. salt
    6 medium white onions
    2 green peppers
    3 c. sugar
    1 qt. white vinegar
    2 Tbsp. celery seed
    1/2 Tbsp. whole cloves
    2 Tbsp. mustard seed
    2 Tbsp. peppercorn
    2 sticks cinnamon
Preparation
    Wash tomatoes.
    Cut into thin slices.
    Sprinkle with salt; let stand, covered, overnight.
    Rinse with water.
    Slice onions, chop peppers.
    Add sugar and vinegar, dissolve over heat.
    Place all spices loosely in a double cheesecloth bag.
    Add tomatoes and spice bag.
    Simmer 1 hour.
    Pour into scalded jars, seal.
    Makes about 7 pints.
