Meatless "Veal" Parmesan - cooking recipe
Ingredients

1 c. oatmeal
3 eggs
1 medium onion, finely chopped
1/2 tsp. salt
1 tsp. oregano
1 Tbsp. parsley, finely chopped
1 (about 15 oz.) can tomato sauce
3 to 4 oz. Mozzarella cheese, sliced
Parmesan cheese, grated

Preparation

Beat eggs.
Mix oatmeal, salt, oregano and parsley.
Stir oatmeal mixture and onion into eggs.
Form into patties.
Fry in hot oil until patties are thoroughly cooked and both sides are browned.
Remove from pan and drain on paper towels.
Discard any oil remaining in pan.
Return patties to pan.
Add tomato sauce. Top patties with Mozzarella cheese.
Cook until sauce is heated and cheese starts to melt.
Sprinkle with Parmesan cheese and serve.
