Cajun Gumbo Over Rice - cooking recipe
Ingredients

4 cans red kidney beans
1 onion, minced
2 c. sliced okra
1 lb. crab meat
2 cans Ro-Tel tomatoes
2 Tbsp. flour
3 Tbsp. butter
2 cans chili hot beans
1 bell pepper, minced
1 lb. crawfish or shrimp
1 kielbasa sausage
Tony Chachere seasoning
3 Tbsp. bacon fat
Preparation

Make a roux by adding heated bacon fat and adding flour. Brown slowly until the color of chocolate.
Set aside.
Saute onion and bell peppers in butter. Cut up sausage and crab meat. Combine all ingredients in a big pot.
Let heat, then stir in roux.
Cover and cook slowly for about 4 hours.
Add seasonings to taste.
Serve over rice.
